Cold Negi Salad with Cucumber and Soba Noodles

This recipe is a perfect lunch or dinner salad that you can add protein or any other kitchen vegetables to. It is endlessly malleable. All the textures and flavors of this dish will be partying in your mouth. If you want to add a spice factor, some chili oil or pepper flakes can turn on the heat.  

Preparation

  1. Toss sliced cucumbers, Negi, salt, sesame seeds in a bowl with rice vinegar.
  2. Cook soba noodles according to packet directions then add to bowl of veggies.
  3. Drizzle lightly with toasted sesame oil and serve.
