- Prepare dressing by mixing all the ingredients and set aside.
- Trim off the leaves, leaving 0.5-1 inch of green stem, and cut Sweet Kabù into wedges with skin.
- Cut each Kumquat into 4 round slices, and remove the seeds.
- Mix the dressing, Sweet Kabù, and Kumquat in a bowl and and allow it to rest for 10-30 min.
- Sprinkle with pink peppercorn and serve.
