SAKU SAKU CABBAGE WITH SHICHIMI MISO DIP
This recipe, inspired by the appetizer served at Japanese Izakaya (like a pub), is a satisfying combination of creamy and crunchy textures, with both savory and sweet elements. Saku Saku cabbage is intended for raw eating and this dish perfectly highlights its incredibly crisp, refreshing eating quality with a salty, savory dip. It’s the perfect snack, side dish or appetizer.

¼ Saku Saku cabbage (approximately ½ lbs)
2 tbsp miso
1 tbsp mayonnaise
1/2 tsp shichimi pepper
20 drops la yu chili oil

Combine the ingredients in a medium-sized bowl. Stir to combine.
Roughly chop the Saku Saku cabbage into approximately 2” pieces.
Scoop a small amount of the mixture with the cabbage leaves, and enjoy!
